Fresh fish fillets are marinated in a tangy ginger and soy sauce, then wrapped in parchment paper and baked to perfection. This cooking method locks in the moisture and flavors, resulting in tender, flaky fish infused with aromatic spices. Method
- Preheat the oven to 220 degrees celsius and prepare a baking tray with two pieces of baking paper 30 cm long.
- In a bowl, whisk together the sesame oil, olive oill, garlic, ginger, chili sauce, brown sugar, soy sauce and the green onions. Using the first piece of baking paper, place the pak choy and cabbage in the middle of the sheet, then place the barramundi fillet on top.
- Add half of the marinade to the fish and gently brush over the fish. Add half of the chilli on top of the fish. Bring the short ends of the baking paper together in the centre and create a 1cm fold.
- Repeat the fold multiple times to form a tight seal then tuck in the two long ends, folding underneath the fish packet.
- Place the baking tray and fish into the oven for 15 minutes. While the fish is cooking, prepare the soba noodles in boiling water over a medium heat.
- Once fish is cooked, transfer to individual plates alongside fresh soba noodles.
